Smoking with water - without a water tray?

There's two schools of thought when it comes to using water/steam with your smoker. And those of us who do it would agree - it's bloody delicious.
HOW DO YOU ADD WATER?
People often ask us if a water tray will fit into our smoker and the short answer is "yes", but the best answer is "you don't have to." Because the baffle plate at the base of our smokers is fully welded, it is also completely watertight. This means all you need to do is add water directly to the plate and once you're done, drain it through the tap at the bottom of the barrel. The process of a reverse flow smoker means your baffle plate is directly heated, keeping that flow of steam regular.
WHY WOULD YOU ADD WATER?
Let's face it, the best meat and veg is most moist meat and veg. The juicier your protein, the more lipsmackingly delicious it is. There are a few ways to keep the moisture in your meat, but this one is a good one. While your food is smoking away, with this method, the water is also steaming away, all the while imbuing moisture to that meaty (or vege) goodness.
DO YOU ADD ANYTHING TO THE WATER?
Sure! A classic add-in is sour citrus like lemon, lime and grapefruit plus woody herbs like thyme and rosemary. Then if you're feeling adventurous, throw in some spices. Think smokey lamb shoulder with rosemary lemon and peppercorns. Or slow cooked pork belly with lime, star anise and juniper berries.
